Back in the good old days, I remember enjoying our traditional round coconut cookies which can easily be found in stores, they are however a bit dry .
This one however are deliciously light and crispy and it simply melts in the mouth.This recipe retain butter as a principle ingredient since butter really does give cookies that magical richness of flavour. Margerine cannot substitute for butter as their high water content prevents cookies from crisping up satisfactorily
|Simple yet nice...you can also add chocolate drizzle to the cookie to give it colour ( this customer however wanted original coconut cookie...nothing fancy|
