Coconut Crisps -Remembering The Good Old Days

Back in the good old days, I remember enjoying our traditional round coconut cookies which  can easily be found  in stores, they are however a bit dry .

This one however are deliciously light and crispy and it simply melts in the mouth. This recipe retain butter as a principle ingredient since butter really does give cookies that magical richness of flavour. Margerine cannot substitute for butter as their high water content prevents cookies from crisping up satisfactorily

Simple yet nice...you can also add chocolate drizzle to the cookie to give it colour ( this customer however wanted original coconut cookie...nothing fancy

These are 20gm each and it fits nicely into the cylinder container

One of my favourite cookie reference book...purchase on my birthday during a short trip to Singapore Kinokuniya
