Red Velvet cakes are sinfully delicious indeed besides all the colouring & fat involved in the making....
This morning I tried making a " healthier" version using yogurt for my kids ...I kept this recipe dah lama tak ingat jumpa kat blog mana ...the verdict... it does taste lighter with yogurt and Yup its one of the best I've made...maybe just a bit mahal this time...
|For the fun of it I added chocolate chip to the batter & apricot colouring & flavour to the cream cheese|
|With my kids these cakes didn't get to stay long in the fridge....it was gone in no time...|
Red Velvet Cake with yogurt
1 1/2 cups butter, softened to room temperature
2 1/4 cups sugar
3 large eggs
1 1/2 cups vanilla yogurt
1 ounce red food coloring (liquid or gel)
1 1/2 tsp. vanilla extract
3 1/4 cups flour
3 Tbs. cocoa powder
2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
Preheat oven to 180C.
-In a large mixing bowl, cream butter and sugar till light and fluffy
-Add eggs one at a time.
-Combine yogurt, red food coloring and vanilla extract in a small bowl.
- Sift together flour, cocoa powder, baking powder, baking soda and salt in another bowl. -Alternate adding the yogurt mixture and flour mixture into the large bowl
- Pour batter into cupcake liners and bake 15-20 Cool completely.
Note :Instead of vanilla yogurt, I've also tried using 1 1/2 cups whole milk mixed with 2 tablespoons of lemon juice / vinegar and it has worked just as good
