Carrot cupcakes are not only delicious but is full of carrot goodness. There's 450gm of carrots to every 240gms of flour ,I used brown sugar for better less sweet taste...later adding in orange zest,cinnamon & walnut ...yum

I am so delighted with these orange macarons taking the shade of mandarin orange...filled them with dried apricot & choc ganache....make your pick...the orange or the macarons..
I'm making 200pcs of these for a chinese friend organizing an open house this chinese new year at her parents place...she contacted me right away when I e-mailed her the pictures ...requesting that I double the original order fearing that such temptation will not be enough for their guest...she has fallen in love with these macs at first sight...opps ...

Baking these for CNY hampers...they are ChipsMore size using 15gm cookie dough for each cookie..I must say it is an all time favourite...being home made ,they taste so much better than packed commercial cookies...
The Recipe ( No fail bake) - yields about 80pcs 15gm cookie dough
250gm butter ( I use SCS butter )
200gm brown sugar
1 egg yolk ( the egg white is used for glazing)
250gm flour ( I used low protein flour available at major bake shops)
100gm corn flour
10gm cocoa powder
50 gm almond nibs
50gm choc chip
1 tbs vanilla
-Beat (A) till smooth ( 3-4 mins on a Kitchen Aid)
- add in (B)... ( beat for another 3-4 min)
-then shape them any size you like (I press them flat and added more choc chips)
-glaze with egg whites to make them shine ( you can skip this and the cookie still taste great)
-heat oven for 5 mins and bake for 20 min at 150C ...Woola...happy baking..

I am into experimenting recipes this week since my CNY hampers are only due next week and I have the luxury of time when the kids are off to school till afternoon.
2 potential customers are interested to have cookies as wedding favours which is also the reason why I am trying out new bakes...I'd like to introduce something different from what they might have tasted
So today I am on another Oreo recipe quest ,only this time I am using Creamo as they are cheaper and taste almost the same...I improvise it a little by adding milk choc chip and white choc chip I found at Hock Choon supermarker instead of the normal choc chip to see how it goes.
Oreo truffels has this lovely texture & taste when combined with choc cookie , a recipe from Picky-palate ...the verdict....I am lost for words ...they are simply delicious my kids told me they'd never buy cookies from Kedai lagi....ya right...(like that's gonna happen).

My kids had been complaining that for the past 2 months I only bake for others and asked me when can I make something for them...So today I decided to try out this new cookie recipe .
Chocolate Chip Oreo...it doesn't get any better than this....recipe is from Picky-palate ( learn step by step tutorial) ...I'm thinking how to introduce this as a doorgift....something different from the normal stuff we have...I know I'd be happy if I get these as a gift ..yumm

I had fun making this box of 2o cav choc, they are of various hearts design and different fillings for each design .The use of transfer sheet was lovely ,it creates the fireworks effect on the heart shaped choc.

These brown favour bags are not just decorated with custom stickers but also punched with lace borders to give it that girly look as an alternative to doily paper . These bags will be filled with 40gm M&M's , 1 box Nestle honey stars , stickers & 1 pc disney lollychoc. Jannah goes to the same kindy as my daughter and her mom Zara went to the same macaron class I did ...after class she said she'd rather buy them as she's not the type who can tolerate failure...hehe..
These tin container make lovely door gifts, it can fit in 3 macarons , 5 aluminum wrap chocolates , cookies and such...I like it for the fact that it is reuseable .
Decorations can be as simple as sticking a sticker to elaborated lace, ribbons & flowers etc...it may cost a but more compared to boxes but you can be almost sure your guest will have it for keeps.

Someone once asked me where did I learn to make cupcakes as she would like to attend class , I told her ..I learn them on my own...mostly through books ..I'd follow every step religiously and most of the time they turn out perfect. One of my favourite cupcake book
is this one here written by Martha Swift & Lisa Thomas of Primerose Bakery.....I never had a fail following their recipe...
Good cupcakes are best with creamy buttercream icing, it
is the best way to enjoy it without the guilt of overly sweet icing ( I see a lot of people scope out pretty icings or fondant.. they are just nice to look at but sinfully sweet to indulge in.

This was the first time I had a customer who wanted macaron shells only... and it must be in burgundy..with coarse almost ground...so I did not sieve the almond. Kelly said to her it taste better that way...hmm
I was given a flower bud as a guide to the shade she wanted ( the wedding theme was going to be in this shade)....
I made these samples first for her to see if it is ok before proceeding with mass production for her wedding next month.
So this batch here is the closest I can get to the flower shade ( 4 drops red + 2 drops blue + 2 drops magenta)...I was told that she will be making her own filling that contains chocolate & rum, a recipe she got from an Italian friend...(well...I don't do rum nor wine base recipes)
Having tasted these macs....hey they altually do taste great with coarse almond...
